I have swithced gears. I was going through my recipe box and found a cheese spread recipe for my DD's grirlfriend who's parents are from the middle east. DD made this cheese spread for one of her race relations college courses and we loved it.
It is great with pita bread, pita chips, crackers or veggies. It is low fat and healthy too. I think I will take some endive too for a low cal dipper.
Jajick cheese spread
16 ounces lowfat cottage cheese 8 ounces low fat cream cheese softened 1 bunch green onions finely chopped 1/2 cup fresh parsley chopped 1/2 tsp salt 1/2 tsp black pepper 1/2 cup sweet basil chopped 1 tsp tarragon dried
1. Use a hand mixer and blend cheese until creamy 2. Add salt & pepper 3. Add finely chopped onions and herbs 4. Blend until well mixed 5. Cover & chill until ready to serve.
