Low Carb Stuffed Baked Potatoes I tweaked another recipe. We love these and they are worth making. Use small potatoes. I got 9 halves fully stuffed. 5 potatoes, scrubbed well. Bake in microwave. Don't overcook. Cool completely. Half &core the potatoes with a sharp small knife almost down to the skin. Leave a little potato not much. You want the skins to hold together. Give the potatoes to the neighbor. Steam 16 oz. fresh cauliflower for about 8 minutes. Cool. Mix 6 oz. cheddar or Colby/Jack cheese grated, with 6 oz. of cream cheese cubed. 4 large green onions, sliced thin and added to cheese mixture. Mash cauliflower with any implement you wish until like mashed potatoes with a few lumps, a pat of butter, salt and pepper. Fill the potato skins with cauliflower. Place in 9"x13" Pam sprayed baking pan. Add the cheese mixture atop each potato. Bake in preheated 350 degree oven until cheese is melted and bubbly. Crisp bacon can be added to the tops if you wish.
