Chocolate & cranberry Oat Snack Cake
INGREDIENTS 1 3/4 cups boiling water 1 cup quick-cooking oats 1/2 cup vegetable oil 1/4 cup Splenda 1 cup brown sugar 2 eggs 1 3/4 cups all-purpose flour 2 tablespoons baking cocoa 1 teaspoon baking soda 1/2 teaspoon salt 1 cup milk chocolate chips, 1 cup dried cranberries
chocolate sprinkles for topping
DIRECTIONS In a bowl, combine water and oats. stand for 10 minutes. In a large mixing bowl, cream oil and sugars. Add the eggs, one at a time, beating well after each one
Beat in oats mixture
Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture. Stir in chocolate chips and cranberries
.Pour into a greased 13-in. x 9-in. x 2-in. baking pan. sprinkle chocolate over top.
Bake at 350f .180c for 40 - 45 mins or until a toothpick comes out clean. Cool on a wire rack.
When cool cut into required size
