Crockpot Sweet 'n Sour Cabbage Unrolls

Wow my husband gave this a 10. I won't say that for myself but I liked
it a lot. Not watery at all, nice and thick gravy, big chunks of meat and
the cabbage was not mushy but had a nice little crunch. I'll post the ingredient list first ok? Preheat your crockpot on high.
Meat:
1 lb. ground beef
1/2 lb. ground pork
2-3 tbs light olive oil
1.5 oz. Dreamfield's pasta cooked 8 min. drained and chopped in f. processor
1 egg
1/4 c. low carb catsup
3/4 tsp. kosher salt
1/2 -1 tsp. black pepper
1 c. drained sauerkraut from 15 oz. can. Set aside the remaining kraut
Put all this together for your meat mixture. Set aside.
Carmelized Onion
4 oz. sliced onion
2 cloves of garlic
Saute in skillet with olive oil. Set aside
Sauce:
1- 15 oz. can diced tomatoes (I use Walmart's Great Value)
1 8 oz. can of tomato sauce (lowest carb.)
2 tbs. brown sugar sub. (I use Diabetisweet)
1 tbs. Splenda or Diabetisweet
1/4 c. + 1 tbs. red wine vinegar
Salt and pepper to taste
Mix this all together.
Cabbage:
1 head cabbage, medium,nice,tight and fresh
Cut in half, core, and cut into quarters Not too thin.
Lay about 1/2 c. of tomato mixture on bottom of crockpot. Add a few
large cabbage leaves. Now add about 1/2 the cabbage, large pieces of
the meat, 1/2 the carmelized onions, 1/2 of the kraut and 1/2 of the sauce.
Repeat ending with sauce.
Place lid on crockpot and cook on high for about 3 to 3.5 hours.
Now you need to drain off all the juices into a bowl and transfer that
to a sauce pan or skillet. (I had some help from DH) Just put the crockpot
full of cabbage back on low with the lid while you are making the gravy.
The juices came to about 2 c. I brought it to a boil and added some Xanthum gum lightly until I thought it was thick enough, then I let it reduce
down for about 3 minutes. Pour this back over the cabbage. Let it
cook on low for about 30 minutes. It is thick, not juicy and the gravy is
great. We hope you like this as much as we did.
