Make Breakfast, Dessert In A Mug
From: Fort Smith's Times/Record Newspaper
Co-worker and fellow foodie Phyllis Koenigseder walked into my office and slapped a piece of paper on my desk. "My sister sent me this," she announced.
I looked up from what I was doing and scanned what she gave me. Actually, it was two pieces of paper. The top one read, "5-Minute Chocolate Mug Cake."
I thought to myself, "That's really interesting. I do believe I have all the ingredients on hand to try it tonight. I can play with this."
The second page included Phyllis' sister's name, Barbara Sparkman.
I think she deserves applause for finding this simple recipe that is suitable for single servings and for inspiring me to go on a search for more like it.
Interestingly, there was a warning at the bottom of the recipe. Apparently, you eat it at your own risk.
"Why is this the most dangerous cake recipe in the world? Because now we are all only five minutes away from chocolate cake any time of the day or night."
5-Minute Chocolate Mug Cake
4 tablespoons sugar
4 tablespoons all-purpose flour
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips, optional
Small splash of vanilla
Add dry ingredients to a mug and mix well. Add egg and mix thoroughly. Pour in milk and oil and mix well. Add the chocolate chips, if using, and vanilla and mix again. Put mug in the microwave and cook for 3 minutes at 1000 watts. The cake will rise over the top of the mug. Allow to cool a little.
I wondered what else can you can cook in a mug? How about breakfast?
Omelet In A Mug
2 eggs, lightly beaten
2 to 3 tablespoons shredded Cheddar cheese
2 tablespoons diced fully cooked ham
1 tablespoon diced green pepper
Salt and pepper to taste
In a microwave-safe mug coated with cooking spray, combine all ingredients. Microwave, uncovered, on high for 30 to 40 seconds; stir. Cook 30 to 60 seconds longer or until eggs are completely set.
Makes 1 serving.
Maybe you have some of that packaged precooked bacon in the refrigerator.
Breakfast In A Mug
1 tablespoon butter or margarine
1 tablespoon milk or water
1 to 2 eggs
1 dash pepper
1 dash salt
1 slice bacon, cooked
Shredded cheese
Place butter in microwave-safe mug and heat on high 30 to 45 seconds or until butter is melted. Add egg(s), milk, salt and pepper. Stir or whip with a fork. Microwave 1 egg on high 35 to 45 seconds; two eggs 11/4 to 13/4 minutes, or until eggs begin to set, stirring with fork to break apart after half of the time.
Remove eggs when they are still soft and moist. Let stand about 2 minutes.
While eggs are standing, crumble bacon and add to eggs. Add cheese, if desired. Eggs will firm up while standing
Alas, it seems that most mug recipes are for desserts. We will just have to live with it.
Peach Cobbler In A Mug
1 tablespoon butter or margarine
2 tablespoons granulated sugar
2 tablespoons flour
1 tablespoon instant nonfat dry milk
1/8 teaspoon baking powder
1/8 teaspoon cinnamon
Dash of salt
2 tablespoons water
1 (4-ounce) snack-size container of diced peaches, well-drained
Microwave 1 tablespoon butter or margarine in mug until melted, about 20 seconds on high power. Combine sugar, flour, instant dry milk, baking powder, cinnamon, salt and water; add to cup. Stir with a fork until well blended. Add well-drained peaches on top of batter. Do not stir.
Microwave for 2 minutes on 70 percent power. Let stand in microwave 1 minute.
Remove from oven and let stand until cool enough to eat.
These next couple of recipes call for egg white powder. I'm guessing you could mix up the dry ingredients and store it that way. But, maybe we can't wait. So let it be known that 1 egg equals 2 tablespoons egg powder and 2 tablespoons warm water. Adjust the recipes accordingly.
