Impossible Possible Pumpkin Pie LC Impossible Pumpkin Pie Tweaked by Barbo
In the blender or food processor place:
3 extra large or jumbo eggs 1 15- oz. can of organic pumpkin 1 tsp. vanilla extract 2 pkgs. Splenda Quick Pack 1/4 c. brown Diabeti-Sweet 1 tsp. good cinnamon 1/4 tsp. ea. of allspice, cloves and nutmeg 1 can of Media Crema (from Wal-Mart) 1/4 c. *LC baking mix (recipe at the bottom)
Whirl until well mixed and pour into a large Pam sprayed pie pan. Cook for about 40-45 minutes or until knife comes clean when inserted into the center. Cool on rack. *I didn't have CarbQuick
Homemade CarbQuick 4 c. Carbalose flour 1/2 c. & 2 tbs. buttermilk powder 2 tbs. baking powder 1/2 tbs. salt 3/4 c. trans fat free Crisco
Sift the dry ingredients, then cut in the fat.
This stuff is fine for something like the pie, or things with spices. I made biscuits and thought they were YUK. I don't really like the CarbQuick biscuits either.
Some variations: Half way through the cooking time, line the edges of the pie place with pecan halves. They will toast and taste lovely. I also have put the LC marshmallows in the middle about 5 minutes or so before the pie was done.
This pie tastes delish when nice and cold. We had LC vanilla ice cream on the top. __________________ Barbo
