Scallops Delicioso
Char's Scallops
1 lbs. of jumbo scallops. Mine were from Trader Joe's and were Wild Alaskan frozen. The little muscle things on the sides were taken off.
Defrost and pat them very dry. Dip them in soy sauce. Cut not thick bacon in halves and wrap around each scallop, secure with tooth pick. Preheat oven to 400 degrees.
I dipped again in a bit of Tamari soy and then sprinkled with a bit of kosher salt and topped with toasted sesame seeds, light/ black or both.
Now that the oven is really hot. Place scallops on non-stick surface and bake for: Mine took 13 minutes. Char used 18 minutes I think.
They were butter soft and the bacon and soy gave them a most delicious flavor. DH was so impressed. This will be a permanent item on our menus.
In the past I've overcooked them and they were like rubber. These melt in your mouth.
