Barbo’s Chicken Meatballs
Got a real value at the .99-cent store. One lb. for .99. Decided to try it. Delish!
One lb. ground chicken 1 jumbo egg ½ c. pork rind crumb mixture (recipe on bottom) 3 tbs. coconut flour Hand full of fresh parsley, finely chopped Kosher salt and pepper to taste 3-4 large garlic cloves, finely chopped and sautéed in a small amount of peanut oil. Just sauté lightly. Throw it in the bowl with the meat mixture. Mix well but don’t over mix and get the meat tough.
Pork rind crumb mixture: Crush one pkg. plain pork rinds into Cuisinart 1 to 1 ½ tsp black pepper ½ c. Parmesan cheese Garlic powder to taste Onion powder to taste (I use lightly) Just pulse this until it is the crumb that you like. Bag and refrigerate or freeze. Use just like any breading.
Using a 1/3 c. scoop make the meatballs and brown on both sides In a non-stick skillet, add low carb prepared sauce and cook about 20 minutes on low with lid. I use ½ c. Dreamfield’s cooked pasta and serve with Caesar salad.
