Today I tried sour dough biscuits. Wow they were huge. Delicious and a combination of biscuit and yeast bread. I sure do love 'em.
Sourdough Biscuits. About 10 large biscuits. Good for freezing. 2 c. AP flour 1/2 tsp. salt 1 tsp. baking powder 1/2 tsp. baking soda 1/2 c. sweet butter (salt free)* 1/2 c. buttermilk or Kifir 1 c. sour dough starter
Preheat oven to 450 degrees F. Prepare baking pan with melted butter and oil
Combine first 4 ingredients. Cut in butter with pastry blender until coarse crumb Add buttermilk/or kefir and sour dough starter Mix well.
A little flour on the board and take dough round and knead it until it feels right to you. Not like bread but knead it more like biscuit dough.
Pat out on floured board until you have a nice mound of dough (not too thin) and cut with large biscuit cutter. Dip in oil/butter mixture on both sides and place them side by side and bake about 15 minutes or until golden brown. The top and bottom will be crispy and the biscuit will be soft. Serve with honey or jam and NOM NOM.
* If you only have salted butter, just take the salt and lessen it to 1/4 tsp. in the dough

These are not mini donuts. This recipe requires a doughnut-baking pan.
Donuts (makes 10)
2 tablespoons pancake syrup 2 teaspoons vegetable glycerin 1 teaspoon vanilla 3 eggs 3/4 cup almond flour 1/4 cup + 2 tablespoons pork rind flour 8 pkts. Splenda (or sweetener of your choice) 3/4 teaspoon baking soda 1/4 teaspoon salt 4 tablespoons butter, melted
Preheat oven to 350 degrees. Oil 10 wells of a donut pan.
In a small bowl, using a fork, beat together the syrup, glycerin, vanilla and eggs. In another small bowl stir together the dry ingredients, and then stir in the butter. Stir the flour into the egg mixture until smooth.
Spoon mixture into the wells. Bake 8 minutes. Remove from pan immediately. Let cool before frosting. Store in refrigerator.
Frosting: 4 oz. cream cheese, room temp. 4 tablespoons butter, room temp. 1/2 teaspoon vanilla 4 pkts. Sweetener (or to taste) 3 tablespoons heavy cream
With a mixer beat all but the cream. Add the cream and beat until well blended.
