Scallop Tacos with Wasabi-Cucumber Sauce
1 tsp chili powder 1 tsp ground cumin 1/4 tsp garlic powder 1/4 tsp salt 1/4 tsp ground black pepper 1 pound sea scallops 2 tsp olive or vegetable oil 1/2 cup low-fat sour cream 2 Tbsp finely shredded cucumber 1 Tbsp prepared wasabi paste, or more to taste 2 tsp chopped fresh cilantro 4 whole wheat or flour tortillas
Prep Time: 15 minutes Cook Time: 5-7 minutes Serves 4 persons 4 pts per serving
1. In a shallow dish, combine chili powder, cumin, garlic powder, salt and black pepper.
2. Add scallops and turn to coat all over.
3. Heat oil in a large skillet over medium-high heat. Add scallops and saute 5-7 minutes, until golden brown and cooked through.
4. Meanwhile, in a small bowl, combine sour cream, cucumber, wasabi paste, and cilantro. Mix well.
5. Serve scallops in tortillas with wasabi-cucumber sauce on the side.
Helpful Tip: Instead of tortillas, create Asian lettuce wraps. Experiment with a variety of lettuces, roll the leaves and enjoy!
