Ingredients
Meatballs for soup: 1 lb ground turkey breast 1/2 lb turkey italian sausage 1/2 c. bread crumbs 1/4 egg substitute 1 clove garlic minced 1/2 tsp salt 1/2 tsp pepper
Soup: 3 quarts non-fat, organic chicken broth 3 cups water. 1or 2 cloves garlic minced, 1/2 cup ancini de pepe pasta, 1 small thinly sliced onion, 1-2 cups sliced fresh mushrooms 4 cups fresh baby spinach (may be chopped if desired)
Instructions
Mix meatball ingredients thoroughly and shape very small meatballs- 1/2 to 3/4 inch diameter. Bake meatballs on a broiler with a drip pan for 25 - 30 minutes in a 350 degree oven. Set meatballs aside
To prepare soup, bring 3 qts chicken broth and 3 cups water to boil, add all ingredients including meatballs EXCEPT spinach. Cook until pasta is tender. Add spinach and heat. Serve hot.
Special Notes
The original recipe for this calls for an egg beaten and stirred into the hot broth at the end much like egg drop soup I did not miss it in the lower fat version. The ingredients are symbolic of new life and was traditionally served at weddings.
