Carefree Golden Oven Stew
4 small chiken breast halves, thighs or whatever pieces you have, skinned 1 lemon halved 1/2 tsp. salt and a dash of black pepper, we don't use salt 1 apple sliced 1 cup mushrooms button style 1 small onion sliced 1/2 cup sliced carrots 2/3 cup chicken broth 1/4 cup water (or wine) 1 tsp. dried crushed tarragon leaves 1 tsp. chopped fresh parsley (I use dehydrated)
Rub shicken with lemon and let stand 15 minutes. Sprinkle with salt and pepper. Place chicken in a 2 qt. baking dish. Add apple, onion, mushrooms and carrots. In another bowl combine shicken broth, water, and tarragon, pour over chicken mixture. Sprinkle with parsley and bake covered at 350 for about 1 hour or until chicken is tender. Makes 4 servings Calories 182. Fat 2 g. Carbs. 10 g. Chol. 70 mg. Fiber 2 g. Protein 28 g. Sodium 403 mg. Points 3.
