Balsamic Roasted Onions
Servings = 6, Estimated POINTS per serving = 1 1¾ lbs. sweet onions (about 3 large), skinned ½ tsp. dried basil ¼ C. balsamic vinegar ¼ tsp. salt
1 Tbs. olive oil 1/8 tsp. pepper
1 tsp. dried thyme
1. Preheat oven to 450°F. Peel onions, leaving roots intact; cut each onion into 6 wedges. Place onion wedges in an 11×7-inch baking dish coated with cooking spray. 2. Combine vinegar and remaining ingredients in a small bowl; pour vinegar mixture over onion wedges, tossing gently to coat. 3. Cover and bake for 25 mins. Uncover and bake an additional 45 mins. or until tender.
