Curried Sweet Potato Quarters
From Cousin Ann
2 lbs. sweet potatoes, scrubbed
1 t canola oil
2 t curry powder
½ t salt
pinch cayenne
Preheat oven to 450°F.
Halve the sweet potatoes and cut each piece lengthwise into quarters.
Arrange the sweet potatoes in a single layer on a large nonstick baking sheet.
Bake, turning once until browned and crisp 35-40 minutes.
