Stuffed Harvest Squash
1 cup (2 small) unpeeled chopped cooking apples 1/4 cup raisins 2 tbsps Brown Sugar Twin 1/4 tsp JO's Apple Pie Spice or any reputable brand 2 small (about 16 ozs each) acorn squash
In a small bowl, combine apples, raisins, Brown Sugar Twin and JO's Apple Pie Spice. Cut each squash in half. Scoop out and discard seeds and membrane. Evenly stuff each half with about 1/3 cup apple mixture. Place squash in a 9- by 13-inch glass baking dish. Cover with waxed paper. Microwave on high 12 minutes, turning after 6 minutes. Uncover and quickly spray tops with butter-flavored cooking spray. Continue microwaving on high 2 minutes. Let set 2 to 3 minutes before serving.
