BAKED CHICKEN PARMESAN FOR TWO
8 oz skinned and boned chicken breast halves 1/8 cup corn flake crumbs 1 tbsp all-purpose flour 1 tbsp light Parmesan cheese 1/4 cup tomato sauce 1/2 cup mozzarella cheese, part skim milk 1 tsp olive oil
Mix all the dry ingredients together in a shallow dish. Rinse the chicken, shake off the excess water & dredge the chicken in the crumb mixture. Place on a olive oil sprayed baking sheet or stone, divide the oil evenly over each breast. Bake at 375° for 25 minutes. Divide the sauce evenly over each breast, add the cheese. Return to the oven & continue baking for 5-10 minutes or until the cheese is melted & lightly golden.
